Food and wine has long been part of life at Hutton Vale. For more information about our wine click on “Visit the Cellar” on the main menu. Farm Follies is the food produce and is proud to be a foundation member of Food Barossa. It all started over a decade ago with the ethos of making the most of seasonal supplies. In farming, a good season for one product can mean a poor season for another. The art of preserving has long been practiced in farming communities all over the world to take advantage of the bountiful harvests. All fruits and vegetables have a natural cycle. While they can be encouraged and aided to grow fruit out of season the final product is always sacrificed in flavour. Preserving at the height of flavour produces the best full flavoured product. It is the point of difference to mass production, and the reason artisan foods are so rewarding for the cook and consumer!
Currently Farm Follies has the following products, these will change slightly as the season comes and goes! Oops Onion and Mint: Both mint and peppermint give a clean finish to caramelised onions. Serve with lamb, beef, poultry or game. Great on a cheese platter, or little cheese pastries topped with Oops onion creates a great nibble.
Spiced Quince Honey: A home favourite. Blended with juices from the lamb roast to make a gravy, a pour of Port (for adults only) creating another taste sensation for you lamb fillet or leg roast. Serve as an accompaniment to a hot lamb curry helps the flavour while cooling the heat.
Chilli Tease: A tomato base with a gentle hand of chilli. This product makes fritz ( a unique South Aust sausage) gourmet, but don’t stop there. Pasta with a spoonful of chilli tease, or as a topping on home cooked pizza or just on a nice cheese. May I suggest a ripe Brie? Caution this product is addictive.
Kashmir Kasaundi: The flavours of curry and tomato, the colours of the Middle East all cooked in the Barossa. An all time favourite of the cook’s. A spoonful in a bowl of rice or soup stock for a tasty meal. Sensational on cold meat atop fresh bread. This product is HOT.
Hutton Vale Honey: Every year when the big red gums are in flower the bee boxes are put into position and the workers begin their activity. The resulting honey is wonderful nectar without that sickly sweet flavour.
Pickled Veggies: An easy way for an anti pasta platter. Various summer vegetables from my garden with Italian herbs, oil and vinegar. Serve with crusty bread and your favourite meats, a Barossa wine and plenty of sunshine, perfect!
Autumn Chutney: Peach and quince combined with spices. Highly recommended served with curries and pappadams.
Beetroot Mustard Medley: A rich ruby red condiment to have on top of a hamburger or with your favourite beef roast. A great flavour with pork. The ultimate with duck terrine.
Plum and Apple: Classic fruits for a classic sauce with pork!
Toasted Roasted: Barossa almonds blanched and oven roasted with a little spice.
A healthy and satisfying nibble!
Products to look out for this coming season: Apricot and mint, Italian Peaches and So’so Good (tomato chutney like Grandma used to make!).
